Organically and Biodynamically grown certified by Stellar and Demeter, this heirloom wheat steals my heart every time I eat it. Super low yield/high flavor, it tastes nothing like modern whole wheats. It builds the soil with it's almost perennial root system while it's stems provide food for the sheep. Grown on my farm since 2001, it is believed to be the first wheat brought to the Americas, possibly before Columbus. Proud to learn that it has now made it onto Slow Food's Ark of Taste list. I grind it while chilled on a small Austrian stone mill fresh upon order, medium or the finest grind possible on this mill. Heroically reintroduced to us all by Monica Spiller.

In 2017 I planted an experimental infield mixture of a modern high protein white wheat named Patwin (that my bread baking customers love) along my beloved Sonora and crimson clover on a few acres. My big hope was that the robust root system of the Sonora would feed the weaker root system of the modern wheat, as on my farm these plants forage for themselves. I do not supply additional irrigation or fertilizers. They did grow very nicely together and I sell this blend to a few bread bakers who want that touch of a higher protein. And it really has a lovely flavor. So, I offer it as well. It is the Sonora/Patwin infield blend.
